Our Nutrition team has a favorite pumpkin chili recipe everyone loves to cook. Genevieve Pyeatt, Nutrition and Health Education Manager, says it’s an autumnal tradition for her family to make the chili on Halloween. “Then I know my kids at least had a healthy dinner before heading out trick or treating,” she says.

We tested this recipe ourselves and couldn’t agree more. What’s a better way to commemorate the pumpkin-everything season?

Pumpkin Chili

Ingredients:

2 Tbsp of vegetable oil

1 can of kidney beans (rinsed)

1 pound of ground turkey

1 C of pumpkin puree

2 C chopped onion

1 Tbsp chili powder

1 C green bell pepper, chopped

1 tsp ground black pepper

1 C yellow bell pepper, chopped

1 tsp salt

2 clove garlic, minced

1 C shredded cheese

1 can diced tomatoes

Optional: sour cream, pepitas, cilantro, and shredded

cheese for topping for garnish

 

Directions:

Heat the oil in a large skillet over medium heat and sauté the onion, green bell pepper, and garlic until tender. Stir in the turkey and cook until evenly browned. Pour meat mixture into slow cooker. Mix in tomatoes, beans, and pumpkin. Season with chili powder, pepper, and salt. Cover and set on low and cook for 4 to 5 hours. Serve topped with Cheddar cheese, cilantro, and sour cream.
